LB301 Weizen Ale I Yeast
This classic German wheat beer strain is a “must-have” in order to produce that beautiful and authentic Hefeweizen taste.
This strain produces beers with a refined balance of banana ester and clove phenolics. It is a low flocculation strain and so will leave the finished beer with a cloudy appearance. The banana character can be increased by slightly underpitching, creating a more fermentable wort, and/or fermenting at the higher end of the recommended temperature range.
Technique to get more banana aroma/ flavour:
1) Use less yeast than usual
2) Use high OG wort
3) Use higher fermentation temperature (do not ferment more than 24°C)
